A Very Pretty Omelet For Dinner

Open-Faced Omelet

2 Boca meatless breakfast links, chopped
handful of torn spinach (I like the spicy spinach blend with arugula)
1/4 c. fat-free egg substitute
1 tbsp. crumbled reduced-fat feta
1/4 roma tomato, diced
freshly ground black pepper to taste

Spray a small skillet with cooking spray and heat over medium heat. Brown the chopped breakfast links, then add the spinach and stir constantly until spinach is quite wilted. Reduce heat to medium-low. Pour in the egg substitute, taking care to completely coat the bottom of the skillet. Cover and cook until egg substitute has set. Sprinkle feta over the omelet, and cover again until it's slightly melty. Transfer to a plate with a spatula. Sprinkle on the diced tomato and pepper. Serves one. WW = 3 pts.
